The truly wonderful thing about shopping the New Paltz Farmers' Market is that the taste, freshness and quality of the produce are such that you need not be a kitchen wizard to create delicious dishes and desserts with your take-home bounty. And you don't need much time. Such peak-ripe, fresh-picked produce from the market often requires very little preparation for optimal flavor.

EARLY HARVEST RECIPES
QUICK & DELICIOUS SAUTEED GREENS
Hearty greens are good for you, as every Popeye the Sailorman fan knows. Spinach, chard and their kin are high in iron and B vitamins. But did you know that hearty greens taste delicious when given a quick sautee in olive or peanut oil? Faster turns out ot be better! Better taste, more nutrition!

Start with a bunch of spinach, chard or a mix of any such hearty, early season greens. Submerge in cold water and wash well to rid greens of any sand or grit. Briefly drain in colander, leaving greens damp. Tear into pieces or give a rough chop.

Hearty Greens Sauteed Italian Style
1. Heat a tablespoon or two of olive oil in a medium-hot pan
2. Add a clove or two of minced garlic and a few red pepper flakes
3. Add your damp, shredded greens to the pan with a pinch of salt
4. Toss greens and cook until just-wilted, approximately one minute
5. Finish with a squeeze of fresh lemon juice or a sprinkle of grated parmesan cheese

Serve as a side dish, toss with pasta for a complete, delicious meal, or place greens beneath a piece of grilled fish, chicken or pork.

Hearty Greens Sauteed Asian Style
1. Heat a tablespoon or two of peanut oil in a medium-hot pan
2. Add a teaspoon or so of grated fresh ginger and a few red pepper flakes
3. Add your damp, shredded greens to the pan with a shot of soy sauce
4. Toss greens and cook until just-wilted, approximately one minute
5. Finish with a handful of toasted seseme seeds and/or a few drops of seseme oil

Serve as a side dish, toss with noodles for a complete, delicious meal, or serve beneath grilled fish, chicken, pork or braised tempeh

Hearty Greens Sauteed And Tossed With Pasta, Greek Style
This lively, healthy alternative to Mac-n-cheese makes a great family-style all-in-one meal.
1. Boil a pound of any pasta in salted water. Penne or farfalle are great choices. Cook until just al dente and drain well
2. Meanwhile, pan-sautee a slivered onion in olive oil with a pinch of salt
3. When onion is translucent, add shredded damp greens. Toss briefly and remove from flame
4. Pour drained pasta, greens and onion into warm bowl with a few tablespoons of good olive-oil. Add a handful of crumbled feta cheese and a handful of Greek olives. Toss and serve warm.
